Ingredients

INGREDIENTS

  • 1 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1/4 cup brown sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup ripe bananas, mashed
  • 1/2 cup pecans, chopped and toasted

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, powdered sugar, and brown sugar until light and fluffy.
  3. Mix in the mashed bananas and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour and salt, then gradually add to the banana mixture, mixing until just combined.
  5. Fold in the toasted pecans gently without over-mixing.
  6. Scoop tablespoon-sized amounts of dough and roll into balls, placing them on the prepared baking sheet, about 2 inches apart.
  7. Flatten each ball slightly with the palm of your hand, then bake for 20-25 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Tip: For an extra touch, drizzle the cooled cookies with melted dark chocolate before serving.

For the best flavor, use ripe bananas and toast your pecans beforehand to enhance their nuttiness. If you want to make the cookies gluten-free, swap out the all-purpose flour for a gluten-free blend.

These cookies can be stored in an airtight container for up to a week. If you want to freeze them, shape the dough into logs, wrap them in plastic wrap, and freeze. When you’re ready, slice and bake directly from the freezer!
