Ingredients

  • 1 cup heavy whipping cream
  • 1/2 cup coconut milk
  • 1/2 cup strong brewed coffee, cooled
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup unsweetened shredded coconut
  • Dark chocolate flakes for garnish

Instructions

  1. In a medium saucepan, heat the coconut milk over low heat and add the semisweet chocolate chips. Stir until melted and smooth.
  2. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the sugar and continue whipping until stiff peaks form.
  3. Gently fold the melted chocolate mixture into the whipped cream until well combined.
  4. In another bowl, mix the cooled coffee and vanilla extract. Add the shredded coconut and stir to combine.
  5. In serving glasses, layer the chocolate mousse with the coffee-coconut mixture, starting with a layer of mousse at the bottom, followed by the coffee mixture, and repeat until the glasses are full.
  6. Finish with a dollop of mousse on top and sprinkle with dark chocolate flakes and extra shredded coconut for garnish.

Notes

Note: For a stronger coffee flavor, use espresso instead of brewed coffee.

For a lighter version, you can substitute whipped coconut cream for regular cream. If you prefer a sweeter mousse, adjust the sugar according to your taste.

These parfaits can be made a day in advance—just keep them covered in the refrigerator. Serve with extra dark chocolate flakes or toasted coconut on top for added texture!
