  • 4 ripe tomatoes, roughly chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 1-2 jalapeños, seeded and chopped (adjust for spice)
  • 3 cups vegetable broth
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 ripe avocado, pitted and peeled
  • 1/4 cup fresh mint leaves
  • 1-2 tablespoons lime juice

Instructions

  1. In a blender, combine the chopped tomatoes, cucumber, red bell pepper, red onion, and jalapeños.
  2. Add the vegetable broth, red wine vinegar, olive oil, salt, and pepper. Blend until smooth and adjust seasoning as necessary.
  3. Chill the gazpacho in the refrigerator for at least 2 hours to enhance the flavors.
  4. In a separate bowl, blend the avocado, mint leaves, lime juice, and a pinch of salt until smooth and creamy to make the Avocado Mint Cream.
