Ingredients

INGREDIENTS

  • 1 cup heavy cream
  • 1/2 cup chocolate chips
  • 2 tablespoons sugar
  • 2 cups fresh strawberries, pureed
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • Chocolate-covered strawberries for garnish

Instructions

  1. In a small saucepan, melt the chocolate chips over low heat, stirring until smooth. Remove from heat and let cool slightly.
  2. In a mixing bowl, whip 1/2 cup of heavy cream with sugar until soft peaks form. Fold the melted chocolate into the whipped cream until fully incorporated.
  3. In another bowl, whip the remaining heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold in the strawberry puree until combined.
  4. In parfait glasses, layer the chocolate mousse followed by the strawberry mousse. Repeat the layers until the glasses are filled, finishing with strawberry mousse on top.
  5. Chill the parfaits in the refrigerator for at least 2 hours before serving. Garnish with chocolate-covered strawberries just before serving.

Notes

Tip: Make sure to let the chocolate cool before folding it into the whipped cream to avoid melting it.

For a lighter version, consider using Greek yogurt instead of heavy cream in the mousse. You can also substitute the strawberries with raspberries or blueberries for a different flavor profile.

These parfaits can be made a day in advance; just keep them refrigerated until ready to serve. If you want to get creative, top them with crushed cookies or nuts for added texture!
