Ingredients

INGREDIENTS

  • 3 large egg whites
  • 100g granulated sugar
  • 200g powdered sugar
  • 100g almond flour
  • 200g shredded coconut
  • 200g caramel sauce
  • 250g unsweetened cream cheese
  • 100g heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra caramel sauce for drizzling

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a clean bowl, whisk the egg whites until frothy. Gradually add the granulated sugar, whisking until stiff peaks form.
  3. Sift together the powdered sugar and almond flour, then fold into the egg whites gently until combined.
  4. Add the shredded coconut and mix until just incorporated.
  5. Pipe the macaron batter into circles on the prepared baking sheets and let them rest for 20-30 minutes until a skin forms.
  6. Bake for 20-25 minutes, or until the macarons are firm and slightly golden. Let them cool completely on the baking sheets.
  7. In a mixing bowl, combine the cream cheese, heavy cream, caramel sauce, vanilla extract, and salt. Whip until smooth and creamy.
  8. Assemble the torte by layering macarons with the caramel cream mixture in between. Repeat until all macarons are used, finishing with a layer of cream on top.
  9. Drizzle extra caramel sauce over the top and refrigerate for at least an hour before serving.

Notes

Tip: Ensure that your macarons are completely cooled before assembling the torte to prevent any melting of the cream filling.

When making macarons, ensure your egg whites are at room temperature for the best volume. Sifting the powdered sugar and almond flour together is crucial for a smooth batter.

For variations, consider adding a sprinkle of sea salt on top of the caramel for a salted caramel effect, or mix in some chocolate chips into the macaron batter for extra richness.

Store any leftovers in an airtight container at room temperature for up to three days. Enjoy this delightful torte with a cup of coffee or a glass of dessert wine!
