  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup shredded coconut
  • 1/2 cup unsalted butter, softened
  • 1 cup coconut milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 limes
  • 1/4 cup fresh lime juice
  • 1 teaspoon vanilla extract

FOR THE TROPICAL FRUIT DRIZZLE

  • 1 cup diced pineapple
  • 1 cup diced mango
  • 1/2 cup diced kiwifruit
  • 1/4 cup fresh lime juice
  • 1 tablespoon honey or agave syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  3. Mix in the coconut milk, lime zest, lime juice, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the shredded coconut.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
