Ingredients

INGREDIENTS

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for about 3-4 minutes per side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Reduce heat and add the sun-dried tomatoes, stirring to combine.
  4. Pour in the heavy cream and Italian seasoning, mixing well. Allow it to simmer for a few minutes until slightly thickened.
  5. Stir in the fresh spinach and let it wilt down, about 2-3 minutes. Remove from heat.
  6. Place the seared chicken breasts back into the skillet, spooning the creamy sauce over each piece. Top with shredded mozzarella and grated parmesan cheese.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Garnish with fresh basil before serving. Enjoy!

Notes

This dish is versatile; feel free to add your favorite vegetables such as mushrooms or bell peppers for extra flavor!

For added flavor, marinate the chicken in olive oil, garlic, and herbs for a few hours before baking. This will infuse the meat with extra taste!

If you’re looking for a lower-carb option, you can substitute the pasta with zucchini noodles or cauliflower rice. This dish can also be easily made ahead of time; simply assemble it and store it in the fridge until you’re ready to bake.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave. Serve it over rice or alongside a fresh salad for a complete meal!
