  • 2 cups pumpkin puree (canned or homemade)
  • 4 cups vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh sage, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large shallots, thinly sliced
  • 1/4 cup all-purpose flour
  • Vegetable oil for frying
  • 2 tablespoons butter

Instructions

  1. Heat the vegetable broth in a saucepan and keep it warm over low heat.
  2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and arborio rice, cooking for an additional 2 minutes until the rice is lightly toasted.
  4. Pour in the white wine and cook, stirring constantly, until the wine has mostly evaporated.
  5. Add the warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Repeat until the rice is creamy and al dente, about 18-20 minutes.
  6. Stir in the pumpkin puree, fresh sage, remaining butter, and Parmesan cheese. Season with salt and pepper to taste.
  7. In a separate pan, heat vegetable oil over medium-high heat. Dredge the shallots in flour, shaking off excess, and fry until golden brown and crispy, about 3-4 minutes. Drain on paper towels.
