Ingredients

INGREDIENTS

  • 12 oz penne pasta
  • 1 lb chicken breast, diced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, fresh
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • 1/2 cup breadcrumbs (optional)
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  4. Add the minced garlic and sun-dried tomatoes to the skillet, sauté for an additional 2-3 minutes until fragrant.
  5. Stir in the heavy cream and Italian seasoning, bringing the mixture to a simmer. Add the fresh spinach and half of the Parmesan cheese, stirring until the spinach wilts.
  6. Combine the cooked pasta with the chicken mixture, mixing well to coat.
  7. Transfer the pasta mixture to a greased baking dish. Top with the remaining Parmesan cheese and breadcrumbs if using.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh basil before serving.

Notes

Tip: For a crispier top, broil for an additional 2-3 minutes at the end of baking.

For a healthier twist, try using whole wheat pasta or swapping in zucchini noodles. You can also substitute chicken with cooked sausage or a plant-based protein for a different flavor profile.

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for a crispy topping, or in the microwave if you’re short on time.
