Ingredients

FOR THE PLANTAIN CRUST

  • 4 tilapia fillets (about 6 oz each), patted dry
  • 2 medium green plantains, peeled and grated
  • 1 tsp chili powder
  • 1 tbsp lime zest
  • ¼ tsp salt
  • 2 tbsp vegetable oil, plus extra for skillet

FOR THE MANGO-HABANERO SALSA

  • 1 ripe mango, peeled and diced
  • ½ red bell pepper, diced
  • 1 small habanero, seeded and minced
  • 3 tbsp red onion, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • Pinch of salt

Instructions

  1. Make the salsa first by combining mango, red bell pepper, habanero, red onion, cilantro, lime juice, and salt in a bowl. Cover and refrigerate while you prepare the fish.
  2. Peel and grate the green plantains using the coarse side of a box grater. Transfer to a shallow dish and stir in chili powder, lime zest, and salt.
  3. Season tilapia fillets lightly with salt and press each into the plantain mixture, coating both sides evenly.
  4. Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium heat until shimmering.
  5. Carefully add the coated fillets to the skillet (work in batches if needed). Cook for 4–5 minutes per side, or until the crust is golden brown and the fish flakes easily with a fork.
  6. Transfer cooked fillets to a paper towel–lined plate to drain any excess oil.
