Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the zucchinis into thin rounds, about 1/4 inch thick.
- In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, minced garlic, oregano, salt, black pepper, and red pepper flakes.
- In another bowl, whisk together the eggs and place the flour in a third bowl.
- Dip each zucchini slice into the flour, then into the eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
