Ingredients

INGREDIENTS

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (or almond flour for gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large avocados
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis into thin rounds, about 1/4 inch thick, and pat them dry with a paper towel.
  3. In a bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
  4. Dip each zucchini slice into the cheese mixture, pressing gently to coat well, then place them on the prepared baking sheet in a single layer.
  5. Bake for 20-25 minutes or until the chips are golden brown and crispy, flipping halfway through for even cooking.
  6. While the chips are baking, prepare the avocado dip by mashing the avocados in a bowl and mixing in the lemon juice, minced garlic, and a pinch of salt.
  7. Once the zucchini chips are done, remove them from the oven and let them cool slightly before serving with the avocado dip.

Notes

Tip: For a gluten-free option, substitute breadcrumbs with almond flour.

For the crispiest chips, make sure to slice the zucchini thinly and evenly. A mandoline slicer can help achieve this. If you want to keep the chips even crisper, you can sprinkle the zucchini slices with salt and let them sit for about 30 minutes to draw out moisture before coating.

Feel free to experiment with spices — adding chili powder or garlic powder can give a delightful kick. The avocado dip can also be customized by adding lime juice, cilantro, or even a dash of hot sauce for extra flavor.

These zucchini chips are best enjoyed fresh but can be stored in an airtight container for up to two days. Reheat them in the oven for a few minutes to regain their crispiness if needed.
