  • 1/4 cup chopped green onions
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Boil the diced sweet potatoes in salted water until tender, about 10-15 minutes. Drain and let cool slightly.
  2. In a large bowl, mash the sweet potatoes until smooth. Stir in the crumbled feta cheese, chopped green onions, flour, eggs, baking powder, garlic powder, salt, and pepper until well combined.
