  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut, sweetened or unsweetened, toasted

Instructions

  1. Preheat your oven to 225°F (107°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until frothy.
  3. Add the cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form.
  5. Sift in the cocoa powder gently and fold it in using a spatula until just combined.
  6. Fold in the vanilla extract and half of the toasted coconut, taking care not to deflate the meringue.
  7. Using a spoon or a piping bag, create dollops or swirls of meringue on the prepared baking sheet, leaving space between each one.
  8. Sprinkle the remaining toasted coconut on top of each meringue cloud.
  9. Bake in the preheated oven for 60 minutes, or until the meringues are dry to the touch and easily lift off the parchment.
