Ingredients

INGREDIENTS

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated apples (about 2 medium apples)
  • 1/4 cup milk
  • 1/2 cup caramel sauce (plus extra for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  6. Gently fold in the grated apples until evenly distributed.
  7. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While the cupcakes are cooling, prepare the caramel frosting by whipping butter until creamy, then gradually adding the powdered sugar and caramel sauce until smooth and fluffy.
  10. Frost the cooled cupcakes with the caramel frosting and drizzle additional caramel sauce on top. Sprinkle with a pinch of cinnamon for garnish.

Notes

Tip: For the best flavor, use tart apples like Granny Smith to balance the sweetness of the caramel frosting.

For an extra touch, you can fold in some chopped pecans or walnuts into the batter for added crunch. If you prefer a less sweet frosting, consider substituting half of the caramel with cream cheese to balance the flavors.

These cupcakes can be stored in an airtight container at room temperature for up to three days. They also freeze beautifully — just make sure to wrap them well!
