  • 2 cups pumpkin, cubed
  • 1 cup pecans
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup

  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed pumpkin with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20 minutes until tender and slightly caramelized.
