Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup coconut cream
  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice
  • Zest of 1 lemon and 1 orange

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water and butter, bringing it to a boil over medium heat.
  3. Once boiling, remove from heat and stir in flour and salt until the mixture forms a ball and pulls away from the sides of the pan.
  4. Allow to cool for 5 minutes, then add eggs one at a time, mixing well after each addition until smooth and glossy.
  5. Using a piping bag, pipe small mounds (about 1.5 inches wide) onto the prepared baking sheet, leaving space between each puff.
