Ingredients

INGREDIENTS

  • 12 mini sweet peppers
  • 4 oz goat cheese, softened
  • 2 tbsp cream cheese, softened
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper (if roasting, optional).
  2. Cut the mini peppers in half lengthwise and remove the seeds and membranes.
  3. In a bowl, combine the softened goat cheese, cream cheese, chopped chives, chopped parsley, lemon juice, salt, and pepper. Mix until smooth and well combined.
  4. Using a small spoon or a piping bag, fill each pepper half with the herbed goat cheese mixture, packing it in gently.
  5. Arrange the stuffed peppers on the prepared baking sheet. If you prefer a warm version, roast them for about 10-15 minutes until the peppers are tender. Otherwise, serve them fresh and cold.
  6. Serve as an appetizer or snack alongside your favorite dip or a refreshing beverage.

Notes

Note: Feel free to experiment with different herbs such as basil or dill for varied flavors!

For a little extra zing, consider adding chopped sun-dried tomatoes or olives to the goat cheese mixture. If you want a spicy kick, try drizzling some hot sauce over the stuffed peppers before serving.

These stuffed mini peppers can be stored in an airtight container in the fridge for up to 3 days. They are best enjoyed within the first day for maximum freshness.
