Ingredients

INGREDIENTS

  • 2 medium sweet potatoes, peeled and cut into bite-sized cubes
  • 1/4 cup apricot jam
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup sesame seeds
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until well coated.
  3. Spread the sweet potato cubes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the oven for 25-30 minutes, or until golden brown and tender, flipping halfway through.
  5. While the sweet potatoes are roasting, prepare the apricot glaze by mixing apricot jam, soy sauce, rice vinegar, and sesame oil in a small bowl.
  6. Once the sweet potatoes are done, remove them from the oven and drizzle the apricot glaze over them, tossing to coat evenly.
  7. Sprinkle sesame seeds over the glazed sweet potatoes and return to the oven for an additional 5 minutes to set the glaze.
  8. Remove from the oven, garnish with chopped green onions, and serve warm.

Notes

Tip: For added crunch, toast the sesame seeds in a dry skillet before sprinkling them over the sweet potatoes.

For an extra kick, consider adding a sprinkle of cayenne pepper to the sweet potato mixture before roasting. If you’re looking for a healthier option, you can replace the apricot glaze with a homemade blend of honey and lime juice for a lighter drizzle.

These bites can be stored in an airtight container in the refrigerator for up to three days, and they also reheat well in the oven or air fryer for a crispy finish. Serve them warm for the best texture and flavor!
