  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1/2 cup honey
  • 1 tablespoon dried culinary lavender, finely chopped
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine graham cracker crumbs and melted butter until well mixed. Press the mixture firmly into the bottom of each muffin liner to form a crust.
  3. In a large mixing bowl, beat the softened cream cheese and honey until smooth and creamy.
  4. Add the chopped lavender, eggs, vanilla extract, and lemon juice. Mix until fully combined and smooth.
  5. Pour the cheesecake mixture over the prepared crusts, filling each liner about 3/4 full.
  6. Bake for 25-30 minutes or until the edges are set and the center has a slight jiggle.
  7. Remove from the oven and let them cool at room temperature for 10 minutes before refrigerating for at least 2 hours to set completely.
