Ingredients

INGREDIENTS

  • 2 large sweet potatoes (about 1 lb total), peeled
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 3 tablespoons pure maple syrup
  • 4 large eggs
  • 1/4 cup fresh sage leaves
  • 2 tablespoons unsalted butter
  • 1 teaspoon white vinegar
  • Red pepper flakes, for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes lengthwise into 1/4-inch-thick planks. Place on the prepared sheet.
  3. Toss the sweet potato slices with olive oil and season lightly with salt and pepper, then arrange in a single layer.
  4. Roast for 20–25 minutes, flipping once, until tender and the edges begin to crisp.
  5. Remove from the oven, brush both sides of each slice with maple syrup, and return to the oven for 5–7 minutes more to caramelize.
  6. While the toasts finish, melt the butter in a skillet over medium heat. Add sage leaves and fry until crisp and fragrant, about 1 minute. Transfer to a paper towel to drain.
  7. Bring a medium pot of water to a gentle simmer and stir in the vinegar. Crack one egg into a small bowl, create a gentle whirlpool in the water, and slip in the egg. Poach for 3–4 minutes until whites are set but yolks remain runny. Repeat with remaining eggs.
  8. Use a slotted spoon to remove each egg and drain on paper towels. Season with a pinch of salt.
  9. To serve, arrange sweet potato toasts on plates, top each with a poached egg, scatter crispy sage leaves, drizzle extra maple syrup, and finish with a sprinkle of red pepper flakes if desired.

Notes

Note: For perfectly uniform toasts, use a mandoline set to 1/4-inch. Store sweet potato toasts and poached eggs separately; reheat to maintain crispness.

For uniform toasts, slice sweet potatoes with a sharp knife or mandoline set to 1/4-inch. Don’t crowd the pan when roasting to ensure crisp edges.

  • To save time, crisp sage while sweet potatoes roast—watch closely to prevent burning.
  • Substitute fresh rosemary or thyme for sage leaves, or drizzle browned butter in place of maple syrup for a savory twist.
  • Leftover toasts can be stored separately and reheated in a 375°F oven for 5–7 minutes to maintain crispness.

Poaching multiple eggs? Add a splash of vinegar to the simmering water and stir gently to help whites hold their shape. Serve immediately for the best runny yolk experience.
