Ingredients

INGREDIENTS

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 12 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1/4 cup espresso or strong coffee
  • 1/4 cup salted caramel sauce
  • 1/4 tsp sea salt
  • Additional caramel sauce for drizzling

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Line a mini muffin pan with paper liners.
  3. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and press into the bottom of each muffin liner to form a crust.
  4. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and continue mixing until well blended.
  5. Add sour cream, eggs, vanilla extract, and espresso, mixing until fully combined and smooth.
  6. Spoon the cheesecake mixture over the crusts, filling each cup about 3/4 full.
  7. Drizzle salted caramel sauce on top of the cheesecake batter and use a toothpick to swirl it through.
  8. Bake for 20-25 minutes, or until the edges are set but the center is slightly jiggly.
  9. Remove from the oven and let cool completely before refrigerating for at least 2 hours.
  10. Once chilled, carefully remove from the muffin pan and drizzle with additional caramel sauce before serving.

Notes

Tip: For a richer flavor, consider using dark chocolate graham crackers for the crust.

For the best flavor, use high-quality espresso or coffee in the cheesecake mixture. If you don’t have espresso, strong brewed coffee works as a great substitute.

To avoid cracks in your cheesecake bites, make sure not to overmix the batter and avoid opening the oven door while baking. If you’re looking for a gluten-free option, consider using crushed gluten-free cookies for the crust.

These cheesecake bites can be stored in the refrigerator for up to 5 days. To serve, allow them to come to room temperature for the best flavor!
