  • 1 pound spiced sausage (or Italian sausage)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet over medium heat, cook the spiced sausage until browned, breaking it up with a spoon.
  4. Add the diced onion and garlic to the skillet and sauté until softened, about 3-4 minutes.
  5. Stir in the cooked quinoa, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 2 minutes until heated through.
