- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 ripe avocados
- 1 tablespoon lemon juice
- 1/4 cup mayonnaise
- 1 tablespoon olive oil
- 4 whole-grain burger buns
- Lettuce leaves and tomato slices for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, combine breadcrumbs, Parmesan cheese, parsley, basil, garlic powder, salt, and pepper.
- Brush each portobello mushroom cap with olive oil, then dip them into the breadcrumb mixture, pressing gently to adhere the crumbs.
- Place the coated mushrooms on a baking sheet lined with parchment paper and bake for 20 minutes until golden and crispy.
- While the mushrooms are baking, make the avocado aioli by blending avocados, lemon juice, mayonnaise, salt, and pepper in a food processor until smooth.
- Toast the burger buns in the oven for 5 minutes if desired.
- Assemble the burgers by placing a portobello mushroom on the bottom half of each bun, adding a generous dollop of avocado aioli, and topping with lettuce and tomato. Cover with the top half of the bun and serve immediately.
Notes
Note: For a vegan version, substitute the mayonnaise with vegan mayo and omit the Parmesan cheese or use a vegan alternative.
For an extra layer of flavor, consider marinating the portobello mushrooms in balsamic vinegar for an hour before breading them. If you prefer a bit of heat, add a pinch of cayenne pepper to the aioli. These burgers can be served with a side of sweet potato fries or a fresh salad.
Leftover aioli can be stored in an airtight container in the refrigerator for up to three days. Reheat the burgers in the oven at 350°F for about 10 minutes if you have any leftovers.
