Ingredients

INGREDIENTS

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cornstarch
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Zest and juice of 1 orange
  • 1/4 cup dark chocolate, melted

Instructions

  1. Preheat the oven to 200°F (95°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, whip the egg whites until foamy. Add cream of tartar and continue whipping until soft peaks form.
  3. Gradually add granulated sugar, one tablespoon at a time, while whipping until stiff peaks form and the meringue is glossy.
  4. Fold in cornstarch and vanilla extract gently until combined.
  5. Spoon or pipe the meringue onto the prepared baking sheet into circular shapes, creating a small well in the center of each to hold the filling.
  6. Bake for 60 minutes or until the meringues are dry and crisp. Turn off the oven and let them cool inside for an hour.
  7. While the meringues cool, whip the heavy cream with powdered sugar, orange zest, and juice until soft peaks form.
  8. Once cooled, fill the meringue cups with the orange-infused cream.
  9. Drizzle melted dark chocolate over the top of each filled meringue cup just before serving.

Notes

Tip: For extra flair, garnish with additional orange zest or edible flowers before serving.

When whipping the egg whites, ensure that your mixing bowl is completely clean and dry to achieve maximum volume. If the meringue is too soft, you may not have whipped it long enough; aim for stiff peaks.

Feel free to experiment with the flavor of the cream filling by substituting orange with lemon or lime for a different citrus twist. These meringue cups can be stored in an airtight container for up to two days, but it’s best to fill them just before serving for optimal texture.

Ingredients

INGREDIENTS

  • 1 ½ cups crushed graham crackers
  • ½ cup toasted almonds, finely chopped
  • ¼ cup unsweetened cocoa powder
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup shredded coconut
  • ½ cup chocolate chips, melted
  • ¼ cup toasted almonds, chopped for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine crushed graham crackers, chopped toasted almonds, cocoa powder, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.
  4. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  5. Add eggs, one at a time, mixing well after each addition. Then stir in vanilla extract and sour cream until fully incorporated.
  6. Fold in the shredded coconut gently to maintain some texture.
  7. Pour half of the cheesecake batter over the cooled crust. Then swirl in the melted chocolate and top with the remaining batter.
  8. Bake for 60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool slowly.
  9. Remove from the oven and let cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
  10. Garnish with chopped toasted almonds before slicing and serving.

Notes

Tip: For a richer flavor, consider adding a splash of coconut extract to the cheesecake mixture.

For the best flavor, make sure to toast your almonds before adding them to the crust; this enhances their nutty aroma. You can also use unsweetened shredded coconut for a less sweet filling.

If you’re short on time, you can use a store-bought crust, but homemade is highly recommended for optimal flavor. Leftovers can be stored in the refrigerator for up to a week, and this cheesecake also freezes well—just wrap it tightly in plastic wrap.

Ingredients

INGREDIENTS

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 2 tablespoons honey (for filling)
  • 1 teaspoon culinary lavender, dried or 1/2 teaspoon lavender extract
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, honey, and salt. Mix until a dough forms.
  3. Press the dough into the bottom and up the sides of a tart pan. Prick the bottom with a fork and bake for 10-12 minutes until golden. Allow to cool.
  4. In a saucepan, heat the heavy cream over medium heat until almost boiling. Remove from heat and add the chopped chocolate, honey, and lavender. Stir until smooth and let cool slightly.
  5. In a mixing bowl, whisk together the eggs and vanilla extract. Gradually pour in the chocolate mixture, whisking constantly until well combined.
  6. Pour the filling into the cooled crust and bake for 12-15 minutes until set but still slightly wobbly in the center.
  7. Remove from the oven and let the tart cool to room temperature before refrigerating for at least 2 hours to firm up. Slice and serve.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to three days.

For the best flavor, use high-quality dark chocolate and pure lavender extract. If you can’t find lavender extract, you can steep culinary lavender in the cream for a more natural infusion.

When serving, consider pairing the tart with a dollop of lightly whipped cream or a scoop of vanilla ice cream to complement its rich flavors. Leftovers can be stored in the refrigerator for up to three days, but it’s best enjoyed fresh.

Ingredients

INGREDIENTS

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup pistachio paste
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup heavy cream (for caramel)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water and butter. Bring to a boil, then remove from heat and stir in flour and salt until a dough forms.
  3. Add eggs, one at a time, mixing well after each addition until smooth and glossy.
  4. Scoop tablespoon-sized dollops of the dough onto the baking sheet, spacing them apart.
  5. Bake for 20-25 minutes until puffed and golden. Do not open the oven door during baking.
  6. Remove from the oven and let cool completely on a wire rack.
  7. In a bowl, whip the heavy cream until soft peaks form, then gently fold in pistachio paste and powdered sugar until combined.
  8. Once the puffs are cool, cut a small slit in the side of each and fill with the pistachio cream using a piping bag.
  9. For the caramel, in a saucepan, combine granulated sugar and corn syrup over medium heat until melted and golden. Carefully stir in 1/4 cup heavy cream until smooth.
  10. Drizzle the warm caramel over the filled cream puffs and allow to set before serving.

Notes

Tip: Fill cream puffs just before serving for the best texture.

For the best results, make sure to chill the pistachio cream for at least an hour before filling the puffs; this helps it hold its shape better. If you prefer a lighter filling, consider folding in some whipped cream.

Storing these cream puffs can be tricky; it’s best to fill them just before serving to keep the choux pastry from becoming soggy. If you have leftover caramel, it can be stored in the refrigerator for up to two weeks and reheated gently before drizzling.

Ingredients

INGREDIENTS

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 3 cups kale, stemmed and chopped
  • 1 cup citrus segments (orange, grapefruit, or tangerine)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pumpkin seeds
  • Salt and pepper to taste

FOR THE DRESSING

  • 1 ripe avocado
  • Juice of 2 limes
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce to a simmer and cover. Cook for about 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let cool.
  2. In a large bowl, combine the chopped kale, citrus segments, cherry tomatoes, red onion, and pumpkin seeds.
  3. Once the quinoa has cooled, add it to the salad mixture. Toss gently to combine.
  4. For the dressing, blend the avocado, lime juice, honey or maple syrup, olive oil, salt, and pepper until smooth and creamy. Adjust seasoning as needed.
  5. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly. Serve immediately or chill for 30 minutes to enhance the flavors.

Notes

Tip: For added protein, consider adding chickpeas or grilled chicken to the salad.

To enhance the flavor, make sure the quinoa is properly rinsed before cooking to remove its natural bitterness. You can substitute the kale with spinach for a milder taste, and if you prefer a different dressing, a simple vinaigrette works beautifully as well.

Store leftovers in an airtight container in the fridge for up to two days; however, the dressing may cause the salad to become soggy, so consider adding it just before serving.

Ingredients

INGREDIENTS

  • 4 large bell peppers (any color)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 avocado
  • 1/4 cup plain yogurt or sour cream (for the avocado cream)
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the liquid is absorbed.
  4. In a large bowl, combine the cooked quinoa, black beans, cumin, smoked paprika, salt, and pepper. Mix well to combine.
  5. Stuff each bell pepper with the quinoa and black bean mixture, pressing down gently to fill completely.
  6. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until the peppers are tender.
  7. While the peppers are baking, prepare the avocado cream by blending the avocado, yogurt, lime juice, and a pinch of salt until smooth and creamy.
  8. Once the peppers are done, remove them from the oven and let them cool slightly. Serve topped with avocado cream and garnished with fresh cilantro.

Notes

Note: You can substitute the black beans with chickpeas or lentils for a different flavor profile.

To prevent the peppers from becoming too soft, consider parboiling them for a few minutes before stuffing. This will maintain their structure during baking.

If you want to add a bit of heat, consider mixing in some diced jalapeƱos or a pinch of cayenne pepper into the filling. For a fresh twist, try adding corn or diced tomatoes to the quinoa mixture.

These stuffed peppers can be stored in the refrigerator for up to 4 days and reheat beautifully in the microwave or oven. To serve, drizzle with extra avocado cream or a sprinkle of fresh cilantro.

Ingredients

INGREDIENTS

  • 4 salmon fillets
  • 1 bunch asparagus, trimmed
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Olive oil for drizzling

FOR THE LEMON DILL SAUCE

  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper. Arrange the asparagus around the salmon. Drizzle olive oil over both the salmon and asparagus, and sprinkle with salt and pepper.
  3. In a small bowl, mix breadcrumbs, parsley, dill, lemon zest, salt, and pepper. Spoon this mixture evenly over the salmon fillets, pressing gently to adhere.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
  5. While the salmon and asparagus are baking, prepare the lemon dill sauce by combining Greek yogurt, mayonnaise, dill, lemon juice, salt, and pepper in a bowl. Mix until smooth and well combined.
  6. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes. Serve the salmon with the asparagus on the side and drizzle the lemon dill sauce over the top.

Notes

Tip: For extra flavor, marinate the salmon in olive oil, lemon juice, and seasoning for 30 minutes before applying the herb crust.

For the best flavor, let the salmon sit with the herb crust for about 10 minutes before baking. This allows the herbs to infuse the fish. If you prefer a different vegetable, feel free to substitute the asparagus with green beans or broccoli.

Store any leftover salmon in an airtight container in the fridge for up to two days. Reheat gently in the oven to maintain its texture. Serve with a side of rice or a fresh salad for a complete meal!

INGREDIENTS

  • 2 lbs beef shank
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 2 tablespoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 oz) diced tomatoes, undrained
  • 2 cups beef broth
  • 1 bay leaf
  • 1 cup polenta
  • 4 cups water
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add beef shank and brown on all sides, about 8-10 minutes. Remove and set aside.
  2. In the same pot, add onions, garlic, carrots, and bell pepper. SautƩ until softened, about 5-7 minutes.
  3. Stir in smoked paprika, cumin, salt, and pepper. Cook for an additional minute until fragrant.
  4. Add the browned beef shank back to the pot along with diced tomatoes, beef broth, and bay leaf. Bring to a simmer.
  5. Cover the pot, reduce heat to low, and braise for about 2 hours, or until the beef is fork-tender.
  6. While the beef is braising, prepare the polenta by bringing 4 cups of water to a boil in a medium saucepan.
  7. Gradually whisk in polenta and reduce heat to low. Stir continuously until thickened, about 15-20 minutes.
  8. Stir in Parmesan cheese, butter, and season with salt and pepper to taste. Keep warm until ready to serve.
  9. Once the beef is done, remove from heat, discard the bay leaf, and shred the beef using two forks.
  10. Serve the smoky paprika-braised beef shank over a generous scoop of creamy polenta. Enjoy!

Notes

Tip: For a spicy kick, add a pinch of cayenne pepper to the braising liquid or the polenta.

For optimal flavor, marinate the beef shank overnight in the spices before braising. If you’re short on time, you can skip this step but marinating will enhance the depth of flavor.

Feel free to substitute the beef shank with oxtail or chuck roast if preferred. Additionally, for a twist, add sautƩed mushrooms or spinach to the polenta for extra texture and nutrition.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of beef broth to loosen the sauce if needed.

Tip: You can grill the shrimp outdoors for an added smoky flavor. Serve with lime wedges for an extra zing!

When making the jerk marinade, feel free to adjust the amount of scotch bonnet pepper based on your heat preference. For a milder option, consider using jalapeƱo instead.

Leftover shrimp can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently to maintain its tenderness, or enjoy it cold on salads! Pair this dish with a sprinkle of fresh cilantro for an added burst of flavor.
