Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the beef short ribs with salt and pepper on all sides.
  3. In a large, oven-safe pot, heat a tablespoon of oil over medium-high heat. Sear the short ribs until browned on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same pot, add the onion, garlic, and ginger. Sauté until the onion is translucent, about 5 minutes.

Instructions

  1. Preheat the oven to 425°F (220°C). Spread the rinsed millet on a baking sheet and bake, stirring once, until golden and toasted, about 10–12 minutes. Let cool.

  1. Position a rack in the center of the oven and preheat to 425°F (220°C). Place a 10-inch ovenproof skillet inside to heat.
  2. In a blender, combine eggs, milk, flour, sugar, salt, poppy seeds, lemon zest and vanilla. Blend until smooth, about 20 seconds.
  3. Carefully remove the hot skillet from the oven and add butter, swirling to coat the bottom and sides.
  4. Pour the batter into the skillet and immediately return to the oven. Bake until puffed and golden, 15–18 minutes.
  5. Meanwhile, combine blackberries, honey, water and lavender in a small saucepan over medium heat. Bring to a simmer and cook, stirring occasionally, until berries break down, about 6 minutes.
  6. Remove from heat and stir in lemon juice. Strain through a fine mesh sieve into a bowl, pressing on solids to extract syrup. Discard solids.
  7. When the Dutch baby is done, remove from oven and let rest 1 minute. Slice into wedges.
