Ingredients

INGREDIENTS

  • 1 pork tenderloin (about 1 pound)
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup fresh figs, chopped
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the chopped herbs, salt, and pepper.
  3. Rub the pork tenderloin with olive oil and Dijon mustard, then coat it evenly with the herb mixture.
  4. Heat a skillet over medium-high heat and sear the pork on all sides until golden brown, about 3-4 minutes per side.
  5. Transfer the pork to a baking dish and roast in the preheated oven for 20-25 minutes or until it reaches an internal temperature of 145°F (63°C).
  6. While the pork is roasting, prepare the fig reduction: In a saucepan, combine chopped figs, balsamic vinegar, honey, and chicken broth.
  7. Bring the mixture to a simmer, cooking until the figs break down and the sauce thickens, about 10-15 minutes. Stir occasionally.
  8. Once the pork is done, let it rest for 5-10 minutes before slicing.
  9. Serve the sliced pork tenderloin drizzled with fig reduction sauce.

Notes

Tip: For a deeper flavor, marinate the pork in olive oil and herbs for a few hours or overnight before cooking.

For best results, let the pork tenderloin rest after cooking; this ensures the juices redistribute for a tender bite. If figs aren’t available, you can substitute with a balsamic reduction or a different fruit-based sauce. This dish pairs beautifully with roasted vegetables or a light salad for a balanced meal.

To store leftovers, wrap the pork tightly and refrigerate for up to three days. Reheat gently in the oven to maintain texture and flavor.

Ingredients

INGREDIENTS

  • 4 salmon fillets
  • 1 ripe mango, pureed
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the mango puree, chipotle sauce, honey, lime juice, garlic powder, salt, and pepper to create the glaze.
  3. Place the salmon fillets on a lined baking sheet and brush with the mango-chipotle glaze. Reserve some glaze for serving later.
  4. Bake the salmon for 15-20 minutes, or until it flakes easily with a fork.
  5. While the salmon is baking, rinse the jasmine rice under cold water until the water runs clear.
  6. In a saucepan, combine the rinsed rice, coconut milk, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and creamy.
  7. Remove the salmon from the oven and let it rest for a few minutes. Serve it over a bed of coconut rice, drizzled with the reserved glaze, and garnish with fresh cilantro.

Notes

Storage: Store leftover salmon in an airtight container in the fridge for up to 2 days. Reheat gently in the oven or microwave.

For the best flavor, let the salmon marinate in the glaze for at least 30 minutes before cooking. This allows the fish to absorb the sweet and spicy notes.

If you prefer a milder version, reduce the chipotle quantity or use chipotle powder instead of sauce. Leftover salmon can be flaked and added to salads or tacos for a delicious twist!

Ingredients

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1 cup shredded aged cheddar cheese
  • 1/4 cup chopped fresh chives
  • 3/4 cup heavy cream
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese and chopped chives until evenly distributed.
  5. In a separate bowl, whisk together the heavy cream and egg. Pour this mixture into the dry ingredients, stirring gently until just combined.
  6. Turn the dough out onto a floured surface and gently knead it a few times until it holds together. Pat the dough into a circle about 1-inch thick.

For a twist, try adding crumbled bacon or diced ham to the dough for a heartier version. Store leftover scones in an airtight container at room temperature for up to two days, or freeze them for up to a month and reheat in the oven.
