Ingredients

INGREDIENTS

  • 1 sheet puff pastry, thawed
  • 4 oz goat cheese, softened
  • 6 fresh figs, chopped
  • 1 tbsp honey
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface and cut it into 3-inch squares.
  3. In a mixing bowl, combine the softened goat cheese, chopped figs, honey, salt, and pepper. Mix until well combined.
  4. Place a spoonful of the cheese and fig mixture in the center of each puff pastry square.
  5. Fold the corners of the pastry over the filling to create a pocket and seal the edges well.
  6. Brush the tops of the pastry bites with the beaten egg to give them a golden color while baking.
  7. Transfer the filled pastry bites to the prepared baking sheet and bake for 15-20 minutes, or until golden and puffed up.
  8. Remove from the oven and let cool slightly. Garnish with fresh thyme leaves before serving. Enjoy!

Notes

Tip: For an even more flavorful bite, consider adding a pinch of nutmeg or cinnamon to the cheese mixture.

For a twist, try using different fruits like pear or apple instead of figs. If you’re short on time, pre-made puff pastry is your best friend—just thaw and use! These bites are best served fresh, but you can store leftovers in an airtight container in the fridge for up to two days. Reheat them in the oven to regain their crispiness.

Don’t hesitate to add a drizzle of balsamic glaze on top for an extra layer of flavor!
