Ingredients

INGREDIENTS

  • 12 mini phyllo cups
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup shredded mozzarella cheese
  • 1 egg, beaten
  • 1 clove garlic, minced
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat a small amount of olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool.
  4. In a mixing bowl, combine ricotta, feta, mozzarella, beaten egg, nutmeg, salt, and pepper. Stir in the cooked spinach.
  5. Place phyllo cups on a baking tray. Spoon the spinach mixture into each cup, filling them generously.
  6. Brush the tops of the filled cups with olive oil to promote browning.
  7. Bake in the preheated oven for 15-20 minutes, or until the phyllo is golden and crispy.
  8. Remove from the oven and let cool slightly before serving. Enjoy!

Notes

Tip: For a flavor twist, try adding sun-dried tomatoes or fresh herbs like dill or parsley to the filling.

For best results, make sure to thaw your phyllo dough overnight in the fridge and handle it gently to prevent tearing. If you don’t have fresh spinach, you can use frozen spinach; just ensure to squeeze out any excess moisture before mixing.

These phyllo cups can be assembled ahead of time and baked just before serving, making them a great option for entertaining. Store any leftovers in an airtight container in the fridge for up to 2 days; reheat in the oven to restore their crispiness.
