  • 1 cup fresh blackberries
  • 2 tablespoons culinary lavender flowers
  • 1/4 cup sugar
  • 1 cup water
  • 1 bottle (750ml) sparkling wine or sparkling water
  • Ice cubes
  • Fresh lavender sprigs for garnish (optional)

Instructions

  1. In a small saucepan, combine blackberries, lavender flowers, sugar, and water. Bring to a simmer over medium heat, stirring until the sugar dissolves and the blackberries soften.
  2. Remove from heat and let the mixture steep for about 10 minutes. Strain the syrup through a fine sieve into a bowl, discarding the solids.
  3. Fill glasses with ice cubes and add about 2 tablespoons of the blackberry-lavender syrup to each glass.
  4. Top off with sparkling wine or sparkling water, stirring gently to combine.
  5. Garnish with fresh lavender sprigs and a few whole blackberries before serving. Enjoy your refreshing drink!
