Ingredients
INGREDIENTS
- 4 large bell peppers (any color)
- 1 pound ground turkey
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cooked rice (white or brown)
- 1 cup corn kernels (fresh or frozen)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup chopped fresh cilantro
- 1 cup salsa
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a large skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes. Drain any excess fat.
- Add the black beans, cooked rice, corn, chili powder, cumin, smoked paprika, cayenne pepper, and salsa to the skillet. Stir until well combined and heated through, about 3-4 minutes.
- Season the mixture with salt and pepper to taste. Remove from heat and stir in half of the shredded cheese and chopped cilantro.
- Spoon the turkey and bean mixture into each bell pepper, filling them generously.
- Top each stuffed pepper with the remaining shredded cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
- Garnish with extra cilantro before serving. Enjoy!
Notes
Tip: To add even more flavor, consider roasting the peppers before stuffing them for a deeper taste.
For a vegetarian option, substitute the ground turkey with textured vegetable protein or more black beans. Feel free to adjust the spice level by adding more or fewer chili flakes according to your taste.
These stuffed peppers can be prepared ahead of time; simply assemble them and refrigerate until you’re ready to bake. They store well in the fridge for up to 3 days and can be reheated in the oven or microwave.
