  • 2 lemons (one sliced, one juiced)
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers (red, yellow, green), chopped
  • 1 cup zucchini, sliced
  • 1 cup carrots, sliced
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the olive oil, lemon juice, garlic powder, chopped dill, salt, and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the herb mixture generously over each fillet.
