  • 30g granulated sugar
  • 50g shredded coconut
  • 1 tsp vanilla extract
  • Pinch of salt
  • 150g butter, softened
  • 200g powdered sugar (for filling)

Instructions

  1. Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper.
  2. In a bowl, sift together the almond flour and powdered sugar. Set aside.
  3. In a separate bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar and continue whipping until stiff peaks form.
  4. Gently fold the almond mixture into the meringue in three additions, being careful not to deflate the meringue. The mixture should flow like lava when ready.
  5. Add the shredded coconut and vanilla extract, folding gently until just incorporated.
