Ingredients

  • 2 large flour tortillas
  • 4 slices of cooked bacon, chopped
  • 1 ripe avocado, mashed
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Salsa or hot sauce, for serving

Instructions

  1. Preheat a skillet over medium heat.
  2. In a bowl, mix the mashed avocado with lime juice, salt, and pepper.
  3. Lay one tortilla in the skillet and spread half of the avocado mixture on one half.
  4. Top the avocado with half of the chopped bacon and half of the shredded cheese.
  5. Fold the tortilla over and cook for about 3-4 minutes until the bottom is golden brown and the cheese is melted.
  6. Flip the quesadilla and cook the other side for another 3-4 minutes.
  7. Remove from the skillet and repeat with the second tortilla and remaining ingredients.
  8. Cut the quesadillas into wedges and serve with salsa or hot sauce.

Notes

Tip: For a spicier version, add diced jalapeños to the filling before cooking.

For an extra layer of flavor, try adding some sautéed onions or bell peppers to the quesadilla filling. If you want to make this dish vegetarian, simply omit the bacon and add some black beans or additional veggies.

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium heat for the best texture.
