Ingredients

INGREDIENTS

  • 1 medium head of cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buttermilk
  • 1 cup buffalo sauce
  • 1/2 cup crumbled blue cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Dip each cauliflower floret into the buttermilk, then coat thoroughly with the flour mixture, shaking off any excess flour.
  4. Arrange the coated cauliflower bites on the prepared baking sheet and bake for 15-20 minutes until golden and crispy.
  5. While the cauliflower is baking, combine buffalo sauce, blue cheese, mayonnaise, and lemon juice in a small bowl. Mix until smooth and well-combined.
  6. Once the cauliflower is done, remove it from the oven and toss it in the buffalo sauce mixture until evenly coated.
  7. Return the coated cauliflower to the baking sheet and bake for an additional 5 minutes to set the sauce.
  8. Serve hot, garnished with chopped fresh parsley and additional blue cheese if desired.

Notes

Note: Adjust the amount of buffalo sauce based on your heat preference; for milder bites, reduce the sauce amount.

For a healthier option, you can bake the cauliflower bites instead of frying them. Simply toss the battered cauliflower in a bit of olive oil and bake at 425°F (220°C) for about 25-30 minutes until crispy.

If you’re not a fan of blue cheese, feel free to substitute it with ranch dressing or a dairy-free alternative for a lighter option. These bites can also be paired with a variety of dipping sauces, such as a cool cucumber sauce or spicy sriracha.

Store any leftover bites in an airtight container in the fridge for up to 3 days. Reheat in the oven to maintain their crispiness.
