- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn (fresh or canned)
- Sliced green onions for garnish
FOR THE AVOCADO CREAM
- 2 ripe avocados
- 1/4 cup Greek yogurt or sour cream
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, toss sweet potato slices with olive oil, chili powder, cumin, salt, and pepper until well coated.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet. Bake for 20-25 minutes, turning halfway, until crispy and golden.
- While the sweet potatoes are baking, prepare the avocado cream by blending avocados, Greek yogurt, lime juice, and salt until smooth. Adjust seasoning to taste.
- Once the sweet potato rounds are done, remove them from the oven and sprinkle cheese on top. Return to the oven for 5 minutes, or until the cheese is melted.
- Remove from the oven, and top each sweet potato round with black beans, corn, and a drizzle of the avocado cream. Garnish with sliced green onions before serving.
Notes
Tip: For added flavor, sprinkle with lime juice or a dash of hot sauce before serving.
For a spicy kick, consider adding sliced jalapeños on top before baking. If you’re looking to make these bites a little more filling, try adding black beans or corn as toppings.
To store leftovers, keep the avocado sauce separate to prevent browning. The sweet potato nacho bites can be reheated in the oven for a few minutes to restore their crispiness.
