Ingredients

INGREDIENTS

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg yolk
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 8 oz dark chocolate (70% cacao), chopped
  • 1 tablespoon dried culinary lavender
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Add the egg yolk and mix until the dough comes together. Press the dough into a tart pan with a removable bottom and prick the bottom with a fork.
  4. Bake the tart crust for 20-25 minutes or until golden brown. Let it cool completely on a wire rack.
  5. In a small saucepan, heat the heavy cream and lavender over medium heat until it just begins to simmer. Remove from heat and let steep for 10 minutes.
  6. Strain the cream to remove the lavender. Pour it back into the saucepan, and add the chopped chocolate, stirring until smooth and glossy.
  7. Add the vanilla extract and honey (if using) to the chocolate mixture and stir until well combined.
  8. Pour the ganache into the cooled tart shell, smoothing the top with a spatula. Refrigerate for at least 2 hours to set.
  9. Once set, slice the tart and serve chilled, garnished with additional lavender flowers or chocolate shavings if desired.

Notes

Tip: Use high-quality dark chocolate for the best flavor. You can substitute the lavender with other herbs or extracts for a unique twist.

When making this tart, ensure your lavender is food safe by using culinary-grade lavender only. You can adjust the amount of lavender to suit your taste; start with a small amount and add more if desired. If you prefer a different flavor profile, try infusing the cream with orange zest or mint instead.

For storage, keep the tart refrigerated and consume within a week. Allow it to come to room temperature before serving for the best texture. This tart pairs beautifully with a dollop of whipped cream or a scoop of vanilla ice cream.
