Ingredients

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (14 oz each) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup fresh basil leaves
  • 1/2 cup heavy cream
  • 1/2 cup pesto, for swirling

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add diced tomatoes (with juices), vegetable broth, sugar, salt, and black pepper.
  5. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  6. Remove from heat and stir in fresh basil leaves.
  7. Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer to a blender in batches.
  8. Return to the pot and stir in heavy cream until well combined. Adjust seasoning if necessary.
  9. Serve hot, swirling in a spoonful of pesto into each bowl before garnishing with additional basil if desired.

Notes

Tip: For a lighter soup, skip the cream and enjoy it as a classic tomato-basil broth!

For a creamier texture, consider adding a splash of heavy cream or coconut milk after blending the soup. If fresh basil isn’t available, dried basil can be used as a substitute, but use it sparingly as it is more potent. When making the pesto, feel free to add nuts such as walnuts or almonds for an extra layer of flavor.

Leftover soup can be stored in an airtight container in the fridge for up to 5 days. To reheat, simply warm it on the stovetop over medium heat, adding a bit of water or broth if it thickens too much. This soup also freezes well for up to 3 months.
