Ingredients

INGREDIENTS

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup water
  • 1 1/2 cups breadcrumbs
  • 1/2 cup buffalo sauce
  • 2 tablespoons olive oil
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon dried dill
  • 1 tablespoon chopped chives
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, garlic powder, paprika, salt, black pepper, and water until smooth.
  3. Dip each cauliflower floret into the batter, allowing excess to drip off, then coat with breadcrumbs.
  4. Arrange the coated cauliflower on the baking sheet and drizzle with olive oil.
  5. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
  6. In a separate bowl, mix together the buffalo sauce and baked cauliflower until well coated.
  7. Return to the baking sheet and bake for an additional 5 minutes for extra crunch.
  8. While the cauliflower is baking, prepare the ranch dip by combining sour cream, mayonnaise, dill, chives, and lemon juice in a bowl. Mix well until smooth and creamy.
  9. Serve the crispy buffalo cauliflower bites hot with the creamy ranch dip on the side.

Notes

Storage: Store any leftover cauliflower bites in an airtight container in the fridge for up to 2 days. To reheat, place them back in the oven to restore crispiness.

For a gluten-free version, use almond flour instead of breadcrumbs. You can also adjust the heat level of your buffalo sauce by choosing mild or hot varieties depending on your preference.

If you have leftovers, store them in an airtight container in the fridge. Reheat in the oven to maintain crispiness rather than using the microwave.
