Ingredients

INGREDIENTS

  • 1 large head cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buffalo sauce
  • 2 tablespoons melted butter
  • 1 cup ranch dressing
  • 1 tablespoon chopped fresh chives (for garnish)

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, water, garlic powder, onion powder, paprika, salt, and black pepper until smooth.
  3. Dip each cauliflower floret into the batter, allowing excess to drip off, then place them on the prepared baking sheet.
  4. Bake for 20 minutes, until the cauliflower is tender and starting to crisp.
  5. While the cauliflower is baking, mix the buffalo sauce and melted butter in a bowl.
  6. After 20 minutes, remove the cauliflower from the oven and brush or toss them with the buffalo sauce mixture.
  7. Return to the oven and bake for an additional 10 minutes, until crispy and golden.
  8. While the cauliflower bites finish baking, prepare the ranch dip by combining ranch dressing with chopped chives in a small bowl.
  9. Serve the cauliflower bites hot with the creamy ranch dip on the side.

Notes

Note: For a vegan option, substitute the ranch dressing with a plant-based alternative.

For extra crunch, consider adding a light coating of breadcrumbs to your cauliflower bites before baking. You can also adjust the spiciness of the buffalo sauce by mixing in more or less hot sauce according to your taste.

These bites can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven to maintain their crispiness. Enjoy them as a snack, appetizer, or even as part of a casual meal!
