Ingredients
INGREDIENTS
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup breadcrumbs (or gluten-free alternative)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tbsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten (or flax egg for vegan)
- Oil for frying
FOR THE GARLIC AIOLI
- 1/2 cup mayonnaise (or vegan mayo)
- 1 clove garlic, minced
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some chunks.
- Add the breadcrumbs, chopped onion, minced garlic, smoked paprika, cumin, salt, pepper, parsley, and beaten egg to the mashed chickpeas. Mix until combined.
- Form the mixture into small patties or fritters, about 1.5 inches in diameter.
- In a large skillet, heat oil over medium heat. Once hot, carefully place the fritters in the pan, making sure not to overcrowd. Fry for about 3-4 minutes on each side or until golden brown and crispy.
- Remove fritters from the pan and drain on paper towels to absorb excess oil.
- For the garlic aioli, whisk together mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl until smooth.
- Serve the crispy chickpea fritters warm with the garlic aioli on the side.
Notes
Storage: Store leftover fritters in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
When frying, be sure to maintain the oil’s temperature to achieve that perfect crispy texture. If the fritters are browning too quickly, lower the heat. You can also bake the fritters at 400°F (200°C) for a healthier version—just lightly spray them with oil and flip halfway through.
For a flavor twist, try adding chopped herbs like parsley or cilantro to the chickpea mixture. These fritters can be stored in an airtight container in the refrigerator for up to three days and reheated in the oven for best results.
