  4. Add chopped carrots and sauté for 5 minutes, stirring occasionally.
  5. Pour in the vegetable broth and add the saffron threads.
  6. Bring to a boil, then reduce to a simmer and cook for 20 minutes, or until carrots are tender.

  8. Stir in the coconut milk and season with salt and pepper to taste.
  9. Serve hot, garnished with fresh cilantro and a drizzle of extra coconut cream.

Notes

Tip: For a touch of elegance, serve with a sprinkle of toasted pumpkin seeds on top.

For a richer flavor, consider roasting the carrots and ginger before adding them to the soup. This will enhance their sweetness and depth. If saffron is not available, a pinch of turmeric can be a suitable substitute, although the flavor will differ slightly.

To store leftovers, keep the soup in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water or coconut milk to loosen the consistency if needed. This soup can also be frozen for up to a month. Just remember to leave out the coconut cream until you’re ready to serve!
