Ingredients
INGREDIENTS
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon (for filling)
- 1/2 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1-2 tablespoons milk (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In another bowl, combine the melted butter, milk, eggs, and vanilla extract until well blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- In a small bowl, combine the brown sugar and ground cinnamon for the filling.
- Spoon a small amount of muffin batter into each muffin cup, followed by a teaspoon of the cinnamon filling, and then cover with more batter until the cups are about 3/4 full.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, prepare the cream cheese frosting by beating together the softened cream cheese and powdered sugar; add milk until desired consistency is reached.
- Once the muffins are done, allow them to cool slightly before drizzling with cream cheese frosting. Serve warm or at room temperature.
Notes
Note: You can substitute almond milk or oat milk for a dairy-free version of these muffins.
For the best flavor, allow the muffins to cool slightly before adding the cream cheese frosting. This will prevent the frosting from melting too much. If you want to experiment, try adding chopped nuts or raisins to the batter for added texture.
Storage-wise, these muffins keep well in an airtight container for up to three days at room temperature. Reheat them briefly in the microwave for that fresh-baked taste!
