  • 2 medium zucchini, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup breadcrumbs
  • 1 large egg, beaten
  • 2 tablespoons sweet chili sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Oil for frying

Instructions

  1. Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture, then squeeze out as much liquid as possible.
  2. In a mixing bowl, combine the grated zucchini, flour, breadcrumbs, beaten egg, sweet chili sauce, garlic powder, and onion powder. Mix until well combined.
  3. Heat oil in a frying pan over medium heat. Once hot, drop spoonfuls of the zucchini mixture into the pan, flattening them slightly with the back of the spoon.
  4. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
