INGREDIENTS

  • 14 oz firm tofu, pressed and cubed
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons peanut butter
  • 1 tablespoon chili paste
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the pressed tofu cubes and fry until golden brown and crispy on all sides, about 8-10 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the broccoli florets and sliced bell pepper to the skillet, cooking for another 3-4 minutes until the veggies are bright and tender-crisp.
  5. In a small bowl, whisk together soy sauce, honey, peanut butter, and chili paste until well combined.
  6. Pour the peanut butter glaze over the tofu and vegetables, stirring to coat evenly. Cook for another 2-3 minutes until heated through.
  7. Serve immediately, garnished with sesame seeds and chopped green onions. Enjoy!

Notes

Tip: For a nut-free version, use sunflower seed butter instead of peanut butter.

For the crispiest tofu, press it for at least 30 minutes before cooking to remove excess moisture. You can substitute honey with maple syrup for a vegan version of this dish.

If you love more heat, feel free to increase the amount of chili paste or add some sliced jalapeños to the stir-fry. Leftovers can be stored in an airtight container in the fridge for up to 3 days and can be reheated in a skillet or microwave.
