Ingredients
INGREDIENTS
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1 cup pomegranate juice
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 cup couscous
- 2 cups vegetable broth
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, salt, pepper, and parsley. Mix until well combined.
- Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
- Bake the meatballs for 20 minutes or until cooked through and golden brown.
- While the meatballs are baking, prepare the pomegranate glaze. In a small saucepan, combine pomegranate juice, honey, and soy sauce. Bring to a simmer over medium heat and reduce for about 5-7 minutes until thickened.
- In a separate pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in couscous and toast for another minute.
- Pour in vegetable broth, bring to a boil, then cover and remove from heat. Let it sit for 5 minutes before fluffing with a fork.
- Once the meatballs are done, toss them in the pomegranate glaze until well coated.
- Serve the glazed meatballs over garlic couscous and garnish with extra parsley, if desired.
Notes
Tip: For an extra burst of flavor, add fresh pomegranate seeds on top before serving.
For a healthier twist, feel free to substitute ground turkey with ground chicken or even a plant-based meat alternative. If you want to reduce prep time, using pre-cooked couscous can save you some hassle.
To store leftovers, place the meatballs and couscous in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove until warmed through.
