  • 2 large cucumbers
  • 1 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Slice the cucumbers into 1-inch thick rounds and scoop out the center to create small cups.
  2. In a mixing bowl, combine feta cheese, Greek yogurt, dill, parsley, lemon juice, minced garlic, salt, and pepper. Mix until well combined and creamy.
  3. Fill each cucumber cup with the feta mixture, heaping it slightly for an appealing presentation.
  4. Garnish with additional herbs on top, if desired, and serve immediately or chill until ready to serve.

Notes

Note: These cups are best enjoyed fresh but can be stored in the refrigerator for up to 2 hours before serving.

To keep the cucumber cups from getting soggy, scoop out the seeds and pat them dry with a paper towel before filling. You can substitute feta with goat cheese or ricotta for a different flavor profile.

These cups can be made ahead of time; just fill them shortly before serving to maintain their freshness. Consider adding a sprinkle of red pepper flakes or a drizzle of balsamic glaze on top for an extra pop of flavor!
