Kale is not only nutritious but also holds up well against dressings, allowing this salad to be made ahead of time. Tossed with a medley of crunchy nuts and a sprinkle of cheese, it’s as pleasing to the eye as it is to the palate.

Ingredients

INGREDIENTS

  • 4 cups kale, chopped
  • 1 cup pomegranate seeds
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 red onion, thinly sliced
  • 1/4 cup olive oil
  • 1/4 cup fresh orange juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the kale, then chop it into bite-sized pieces and place it in a large salad bowl.
  2. Add the pomegranate seeds, chopped walnuts, crumbled feta cheese, and sliced red onion to the bowl.
  3. In a separate small bowl, whisk together the olive oil, orange juice, apple cider vinegar, honey, salt, and pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are well coated.
  5. Let the salad sit for about 15 minutes before serving to enhance the flavors. Serve chilled or at room temperature.

Notes

Storage: This salad is best enjoyed fresh but can be stored in the refrigerator for up to 2 days. Keep the dressing separate until ready to serve for optimal freshness.

For the best flavor, let the salad sit for about 15 minutes after dressing to allow the flavors to meld. If you want to make this salad ahead of time, keep the dressing separate until just before serving to maintain the crispness of the kale.

Feel free to add other toppings like sliced avocados or roasted chickpeas for an extra boost of flavor and nutrition. This salad pairs beautifully with grilled chicken or fish for a complete meal.

Ingredients

INGREDIENTS

  • 1 medium butternut squash, peeled and diced
  • 2 medium apples, peeled, cored, and diced (preferably sweet like Honeycrisp)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
  • Salt and pepper to taste
  • Optional: pumpkin seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss the diced butternut squash and apples with olive oil, salt, and pepper. Spread in an even layer.
  3. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and slightly caramelized.
  4. In a large pot, sauté the diced onion over medium heat until translucent, about 5-7 minutes. Add the minced garlic and fresh sage, cooking for an additional minute until fragrant.
  5. Add the roasted butternut squash and apples to the pot, followed by the vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes to allow the flavors to meld.
  6. Using an immersion blender, blend the mixture until smooth. If you don't have an immersion blender, carefully transfer the mixture to a countertop blender in batches and blend until smooth.
  7. Stir in the heavy cream and adjust seasoning with salt and pepper as needed. Heat through and serve warm.

Notes

Tip: For extra flavor, drizzle a bit of olive oil or balsamic reduction on top before serving.

For a vegan version, replace the cream with coconut milk or a plant-based cream alternative. Don’t skip the roasting step; it enhances the flavors significantly. If you prefer a spicier kick, consider adding a pinch of cayenne pepper or a dash of hot sauce while blending.

This bisque can be stored in the refrigerator for up to 4 days, and it also freezes well for up to 3 months. Just reheat gently on the stove, adding a little water or broth to thin it out if needed.

Ingredients

INGREDIENTS

  • 4 bone-in pork chops
  • 1/4 cup honey
  • 2 tablespoons chipotle in adobo sauce, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup rice
  • 2 cups chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, minced chipotle, soy sauce, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper to create the glaze.
  3. Season the pork chops with salt and pepper on both sides. Heat a large oven-safe skillet over medium-high heat and add olive oil.
  4. Sear the pork chops for about 3-4 minutes on each side until browned.
  5. Brush half of the chipotle glaze over the pork chops and transfer the skillet to the preheated oven. Bake for 10-12 minutes until cooked through.
  6. While the pork chops are baking, prepare the cilantro lime rice: Rinse the rice under cold water, then boil it in chicken broth according to package instructions.
  7. Once the rice is cooked, fluff it with a fork, then stir in chopped cilantro and lime juice. Season with salt to taste.
  8. Remove the pork chops from the oven and brush with the remaining glaze. Let rest for a few minutes before serving.

Notes

Tip: For an extra kick, add more chipotle or a sprinkle of cayenne pepper to the glaze.

To ensure your pork chops remain juicy, avoid overcooking them. A meat thermometer should read 145°F when done. If you can’t find fresh cilantro, parsley can be a good substitute for the rice. For extra flavor, consider adding black beans or corn to the rice.

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet to maintain the texture of the pork. This dish also pairs wonderfully with a side of grilled vegetables or a fresh salad!

Ingredients

INGREDIENTS

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Oil for frying

FOR THE MANGO SALSA

  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 small jalapeño, seeds removed and minced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat the oil in a deep skillet or frying pan to 350°F (175°C).
  2. In a shallow dish, combine flour, salt, pepper, and paprika.
  3. In another dish, beat the eggs until well combined.
  4. In a third dish, mix together the shredded coconut and breadcrumbs.
  5. Dip each shrimp first into the flour mixture, then into the beaten eggs, and finally coat with the coconut-breadcrumb mixture.
  6. Carefully place the coated shrimp into the hot oil and fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
  7. For the mango salsa, combine diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Mix well to combine.
  8. Serve the crispy shrimp bites warm with a generous side of mango salsa.

Notes

Tip: For a healthier alternative, try baking the shrimp bites in the oven at 400°F (200°C) for about 15-20 minutes until crisp and cooked through.

For a gluten-free option, use almond flour instead of breadcrumbs for the coating. If you want to spice things up, consider adding chopped jalapeños to the mango salsa for an extra punch of heat.

These shrimp bites are best served immediately after frying to maintain their crispiness. However, if you have leftovers, store them in an airtight container in the fridge. Reheat in an oven or air fryer to get the crunch back.

Ingredients

INGREDIENTS

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar

FOR THE CREAM CHEESE GLAZE

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk the buttermilk, egg, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. In a small bowl, mix together the cinnamon and brown sugar to create the filling.
  7. Turn the dough out onto a floured surface and gently knead a few times until it holds together. Roll it out into a rectangle about 1/2 inch thick.
  8. Spread the cinnamon-sugar mixture evenly over the dough, then roll it up tightly from one end to the other.
  9. Cut the rolled dough into 8 equal pieces and place them on the prepared baking sheet, cut side up.
  10. Bake for 15-20 minutes or until golden brown. Allow to cool slightly on a wire rack.
  11. While the scones cool, prepare the cream cheese glaze by whisking together the softened cream cheese, powdered sugar, milk, and vanilla until smooth and creamy.
  12. Drizzle the cream cheese glaze over the warm scones before serving.

Notes

Tip: For a richer flavor, add a pinch of nutmeg to the dough or glaze.

For optimal results, ensure your butter is very cold before cutting it into the dry ingredients, which helps create a flaky texture. If you want to switch things up, consider adding chocolate chips or dried fruit to the dough for extra flavor.

These scones can be stored in an airtight container at room temperature for up to 2 days. To reheat, simply pop them in the microwave for a few seconds or warm them in the oven for a few minutes.
