  • 1 large egg
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro
  • Oil for grilling

FOR THE CILANTRO CREAM

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Soak the saffron threads in a tablespoon of warm water and set aside.

Notes

Tip: These fritters can be made ahead of time and reheated in the oven for a quick appetizer or snack.

For a crunchier texture, try adding a bit of cornmeal to the batter. If you’re looking to make them gluten-free, substitute all-purpose flour with a gluten-free blend. Serve these fritters hot straight from the skillet, but they can also be enjoyed at room temperature, making them great for picnics.

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat them on a skillet or in the oven to maintain their crispiness.
