Ingredients

INGREDIENTS

  • 120g almond flour
  • 200g powdered sugar
  • 100g egg whites (about 3 large eggs)
  • 50g granulated sugar
  • 1 tsp culinary lavender, finely ground
  • 1/4 tsp salt
  • Lavender-infused honey for filling

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar to eliminate lumps.
  3. In a separate bowl, beat the egg whites with salt until foamy. Gradually add granulated sugar and continue beating until stiff peaks form.
  4. Gently fold the almond flour mixture and ground lavender into the meringue until just combined, being careful not to deflate the mixture.
  5. Transfer the macaron batter to a piping bag and pipe small circles onto the prepared baking sheet, leaving space between each.
  6. Tap the baking sheet on the counter to release air bubbles, then let the macarons sit for 30-60 minutes until a skin forms.
  7. Bake in the preheated oven for about 20 minutes or until the macarons have risen and formed feet. Allow them to cool completely on the baking sheet.
  8. Once cooled, pair the macarons and fill with lavender-infused honey using a piping bag. Sandwich them together gently.

Notes

Storage: Store macarons in an airtight container in the fridge for up to a week. They often taste better a day after filling.

When making macarons, ensure that your egg whites are at room temperature to help achieve the perfect meringue. Sift the almond flour and powdered sugar together to avoid any lumps for a smoother batter.

If you want to enhance the lavender flavor, consider using culinary-grade lavender or infusing the honey longer. Macarons can be stored in an airtight container in the fridge for up to a week; they often taste better after a day as the flavors meld.

written by Linda

Experience the vibrant flavors of the Mediterranean with this Crisp Mediterranean Farro Salad. Packed with colorful veggies, nutty farro, and a creamy lemon-tahini dressing, it’s a salad that’s as satisfying as it is healthy.

Farro, an ancient grain, adds a delightful chewiness, while the freshness of cucumbers, tomatoes, and herbs brightens every bite. The lemon-tahini dressing brings everything together with its creamy texture and zesty flavor, making this dish perfect for lunch or as a side at dinner.

Ingredients

INGREDIENTS

  • 1 cup farro
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste

FOR THE DRESSING

  • 1/4 cup tahini
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the farro under cold water and drain.
  2. In a medium pot, combine farro and water. Bring to a boil, then reduce heat to low, cover, and cook for 25-30 minutes until tender. Drain any excess water.
  3. While the farro is cooking, prepare the vegetables: chop the tomatoes, cucumber, bell pepper, red onion, parsley, and mint in a large mixing bowl.
  4. In a small bowl, whisk together all the dressing ingredients until smooth. Adjust the consistency with water if necessary.
  5. Once the farro is cooked and slightly cooled, add it to the vegetable mixture. Pour the dressing over the salad and toss gently until combined.
  6. Season with salt and pepper to taste and serve chilled or at room temperature.

Notes

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

For the best texture, make sure to cook the farro until it’s tender but still slightly chewy. If you don’t have tahini, you can replace it with sunflower seed butter for a nut-free option.

Feel free to switch up the vegetables based on what’s in season or what you have on hand. This salad also stores well in the fridge for up to 3 days, making it great for meal prep!

Ingredients

INGREDIENTS

  • 12 large pasta shells
  • 15 oz ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, sauté the chopped spinach until wilted, about 3-4 minutes. Remove from heat.
  4. In a mixing bowl, combine ricotta cheese, sautéed spinach, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  5. Spread 1 cup of marinara sauce on the bottom of a baking dish.
  6. Stuff each pasta shell with the ricotta mixture and place them in the baking dish, open side up.
  7. Top the stuffed shells with remaining marinara sauce and sprinkle mozzarella cheese evenly over the top.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
  9. Let cool for a few minutes before serving. Garnish with fresh basil if desired.

Notes

For extra flavor, add a pinch of nutmeg to the ricotta mixture. Store leftovers in the refrigerator for up to 3 days.

For a lighter version, try substituting part of the ricotta with cottage cheese for a similar texture with fewer calories. If you want to add a bit of heat, sprinkle some red pepper flakes into the marinara sauce.

Make-ahead tip: Assemble the shells in advance and refrigerate them until you’re ready to bake. Just add an extra 10 minutes to the baking time if cooking straight from the fridge.

These stuffed shells pair wonderfully with a simple green salad and garlic bread for a complete meal!

Ingredients

INGREDIENTS

  • 4 boneless, skinless chicken thighs
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup couscous
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix paprika, cumin, coriander, cinnamon, cayenne, salt, and pepper together.
  3. Rub the spice mixture all over the chicken thighs, ensuring they are evenly coated.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the chicken thighs and sear for 4-5 minutes on each side until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and juices run clear.
  6. While the chicken is baking, bring chicken broth to a boil in a saucepan. Add couscous and minced garlic, stir, then remove from heat, cover, and let sit for 5 minutes.
  7. Fluff the couscous with a fork, then stir in chopped cilantro and lemon juice.
  8. Serve the crispy chicken hot alongside the garlic-cilantro couscous, garnished with additional cilantro if desired.

Notes

Leftover chicken can be shredded and used in salads or wraps for a quick meal.

For the best flavor, marinate the chicken for at least 30 minutes or up to overnight. This allows the spices to penetrate the meat fully. If you’re short on time, a quick 15-minute marination will still yield delicious results.

As for the couscous, feel free to add some chopped vegetables like bell peppers or zucchini for added nutrition and color. You can also substitute parsley for cilantro if you’re not a fan. Store any leftovers in an airtight container in the fridge for up to 3 days.

Ingredients

INGREDIENTS

  • 1 small head cauliflower, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup green onions, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 egg, beaten (or flax egg for vegan)
  • Oil for frying

Instructions

  1. Steam the chopped cauliflower until tender, about 5-7 minutes. Let it cool slightly before transferring to a mixing bowl.
  2. In the same bowl, mash the chickpeas with a fork until mostly smooth but still slightly chunky.
  3. Add the steamed cauliflower, breadcrumbs, cilantro, green onions, spices, salt, pepper, and egg to the chickpeas. Mix until combined.
  4. Form the mixture into small fritters, about 2-3 inches in diameter.
  5. Heat oil in a skillet over medium heat. Fry the fritters in batches until golden brown and crispy, about 4-5 minutes on each side.
  6. Remove the fritters from the skillet and drain on paper towels to absorb excess oil. Serve warm with yogurt dip on the side.

Notes

For a gluten-free version, use gluten-free breadcrumbs or oats. These fritters can be baked at 400°F for 20-25 minutes for a healthier option.

For the best results, make sure to drain the chickpeas well and pat them dry to avoid excess moisture in the fritters. You can easily substitute the yogurt dip with a tahini or avocado-based dressing for a vegan option.

These fritters can be made in advance and stored in the refrigerator for up to 3 days. Reheat them in the oven or an air fryer to restore their crispiness before serving.

  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) if you prefer to roast your tomatoes slightly, though this step is optional.
